I made a quad batch of this cake batter to construct a large birthday cake. Three small tiered two-layer cakes and one half-sheet cake. Went over like gangbusters (and this was for a SOUTHERN crowd). My only critique is that the cake layers can dry out and I would have used more soaking syrup while I was icing it if I had known this. I have a picture of this cake if anyone would like it. I was hoping to post it here but there doesn't seem to be a way to do that. This recipe is incredibly "well behaved." If you make the cake, you'll know what I mean. chiffonade@hotmail.com

This cake was awesome! Very moist and easy to make. I added more powdered sugar to the icing until it became as thick as I wanted and it turned out great!

To be honest, I was never interested in red velvet cake - till I moved to the south. A friend requested this cake for his 21st birthday which was the first time I baked it. I could not believe how luxurious the batter looked in the bowl and I was very pleased at the tenderness and taste of the cake. I just prepared this recipe again - This time I'm doing a 2 layer half sheet and three rounds that will be sliced into layers. It's for my partner's boss' birthday and red velvet cake is his favorite dessert. It's baking now and smells wonderful. I highly recommend this cake because it uses butter and not oil like so many I have seen online. The batter is very "well behaved" if that makes sense. To a novice the intense red color may be offputting but your first mouthful will make you dismiss any reservations.
